Ingredients

For the Cod:

  • 450 g cod fillets, cut into 4 pieces
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

For the Brussels Sprouts:

  • 450 g Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

For the Lemon Garlic Butter:

  • 4 tablespoons butter
  • 4 garlic cloves, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste

Instructions

  1. Prepare the Brussels Sprouts:
    • Preheat the oven to 200°C.
    • In a large bowl, toss the halved Brussels sprouts with olive oil, garlic powder, onion powder, salt, and pepper.
    • Spread the Brussels sprouts in an even layer on a baking sheet.
    • Roast in the oven for 20–25 minutes until golden and tender.
  2. Season the Cod:
    • In a bowl, combine olive oil, chopped garlic, lemon juice, dried oregano, salt, and black pepper.
    • Add the cod pieces to the mixture, ensuring they are well coated.
  3. Cook the Cod:
    • Heat a large skillet over medium heat.
    • Place the seasoned cod pieces in the skillet.
    • Cook for 3–4 minutes on each side until the fish is cooked through and flakes easily.
  4. Prepare the Lemon Garlic Butter:
    • In a small saucepan, melt the butter over medium heat.
    • Add the chopped garlic and sauté for about 1 minute until fragrant.
    • Stir in the lemon juice and chopped parsley.
    • Season with salt and pepper to taste.
  5. Assemble the Dish:
    • Divide the roasted Brussels sprouts among serving bowls.
    • Place a piece of cooked cod on top of the Brussels sprouts in each bowl.
    • Drizzle the warm lemon garlic butter sauce over the cod and Brussels sprouts.
